HEAT oven to 350°F.
LINE mini-muffin tins with Kretschmar Black Forest Ham.
SAUTE spinach, onions and half of thyme for 2 minutes.
REMOVE from the heat and cool.
BEAT eggs until fluffy.
ADD spinach, onion and cheese to beaten eggs.
BAKE 15 minutes or until done.
SEASON with salt, pepper and thyme to taste then serve!
